New Delhi: Holi is known as the festival of colours and food happens to be the best thing about this festival. Delicious food is the essence of any festival. This is that time of the year when everything takes a backseat in life and it's only about celebrating the festival with loved ones. Because, these joyous occasion marks the beginning of spring and symbolises the triumph of good over evil, it’s a beacon of  hope, love and merriment.

Especially in India, no celebration is complete without good food and drinks. So, as you play around with vibrant gulal, you simultaneously would want to enjoy cold beverages and hot snacks. Although India’s food varies from region to region, there are some delicacies that are enjoyed by all during this cheerful fiesta.

1. Bhalle balle – Dahi bhalle

As the name suggests, the dish contains two primary elements – dahi (curd) and bhalle (fried dough balls made of urad dal/moong daal/channa dal). Both these items are combined and topped off with spices and sweet and sour chutneys to create a comforting dish. It is also called dahi bhalla in North India, and is a popular food during the Holi holidays.

2. Humhari tumhari meethi – Gujiya

The classic Holi dessert is a must on this auspicious occasion. With delicious stuffings and a crispy outer layer, this dessert will remind you of your Holi memories from childhood. Fried or baked, this  dessert is one that you absolutely need to prepare and share with your friends and family members and must try different types of gujiya’s in this holi: chocolate, coconut, khas, namkeen, apple gujiya.

3. Kuch thanda hojaye – Thandai

Any Bollywood Holi scene is incomplete without the dramatic pour of a glass of thandai. This milk-based cooling drink is often topped off  with nuts and spices, and sometimes even laced with bhaang (a hallucinogenic). Everywhere in North India (Banaras is called the hub of thandai), this drink is right at the heart of the festival and even offers medicinal benefits! Most of all, it is a perfect beverage for the March heat in the nation

4. Gur naal Ishq meetha – Malpua

Using jaggery instead of sugar to make malpuas doesn’t make this dish any healthier, but does work brilliantly when it comes to flavour. The earthy jaggery taste when combined with the flavour of the desi ghee and creamy rabdi creates something that takes decadence to another level. So include them in your Holi menu and enjoy the delight on everyone’s faces.

5. Malai maar ke – Badam Phirni

Phirni is a thicker version of Kheer and has a more creamy texture. Try out this recipe of Badam Phirni. Loaded with the goodness of  almonds, this delectable sweet dish is one to look out for.

6. Masti me khao – Puran poli

A burst of flavours through the delicious Puran Polis is something you cannot miss. This delectable dish is easy to make and is light as well as scrumptious. Stuffed with chana dal and sugar, its sweet and savoury flavor will tempt you and everyone who takes a bite.

7. Rang bharse – Bhang ke pakore

Bhang is the special mascot herb of Holi, and although you can include them in your drinks, why not try a new recipe for this Bhang Pakora. With the crispiness of the pakora and the delicious taste of the bhang, it’s sure to be a shining star among your dishes. Made with simple ingredients like besan, onions, spices and bhang, it only takes 20 minutes to fry.

8. Bolo shara ra khao – Namak para/Shakar para

Two sides of a coin, namak para and shakar para are the savoury and sweet versions of the same dish. The latter is a popular dish in West India, especially in Gujarat. Namak and shakar para are fried dough dishes that are crunchy and often serve as a mid-day snack. Tea is the ideal partner for a serving for them. These are a delight after a long morning of playing Holi.

9. Rangon k saath meethi – Rasmalai

No Indian festival is complete without Rasmalai, and Holi is the same. Creamy delight with delicious chhenna, this dessert is the epitome of  sweet goodness. You can add your own twists to the delicacy with saffron strands or fruit essence and adorn your dessert table with this aromatic sweet dish.

10. Keep calm have – Kalakand

The flavours and textures on this one are great! Imagine soft melt in the mouth saffron kalakand studded with chunks of dry fruits sitting on a crisp samosa patty nest. Making this one is as simple as eating take out and offers just as much satisfaction. Don’t forget to top it up with a few bright orange strands of kesar for more of the Holi vibe!
