Soups don't simply relieve your spirit but are amazingly sound for the body. Also, they are effortless to plan! Chicken & Kale Soup

This simple chicken and kale soup will keep you warm on a cold and rainy day or any day when you want a simple, hearty soup. You can make this soup with frozen kale instead of thawing it first to save time. Here is the recipe for your ease!

Step 1
In a large, heavy pot, heat the oil over medium heat. Cook, occasionally stirring until the onion is softened, for about 5 minutes. Cook some more, constantly stirring, until garlic is fragrant, for about 1 minute. Combine the beans, chicken, potatoes, broth, thyme, salt, and pepper in a large mixing bowl. Bring to a boil over medium-high heat, then reduce to a simmer. Simmer, covered, for 18 minutes, or until the potatoes are tender and an instant-read thermometer inserted into the thickest part of the chicken registers 165 degrees F.

Step 2
Transfer the chicken to a plate and shred it into bite-size pieces with two forks. Cook, frequently stirring, over medium heat until the kale is wilted and tender, about 2 minutes. Take the pan off the heat and stir in the shredded chicken and lemon juice. Before serving, remove the thyme sprigs. Serve immediately.

Slow-Cooker Potato Soup

This simple slow-cooker potato soup contains all of your favourite potato ingredients, such as bacon and cheese. Serve this loaded baked potato soup with a salad for a quick dinner whenever you're craving some serious comfort food. It would also be a good choice for a casual party. Serve it straight from the slow cooker, with bowls of toppings on the side for everyone to build their own. You can easily make this soup vegetarian by substituting vegetable broth for the chicken broth and omitting the bacon.

Recipe

Step 1
In a 6-quart slow cooker, combine the potatoes, broth, garlic, salt, and bay leaf. Cook on Low for 6 hours, or until the potatoes are very tender. Turn the slow cooker off.

Step 2
Remove the garlic and bay leaf and set aside. To the potato mixture, add half-and-half and pepper; mash with a potato masher, leaving some chunks.
Step 3
Blend half of the potato mixture properly. Remove the centrepiece of the blender's lid to allow steam to escape. Cover the opening with a clean towel. 10 seconds of processing time (When blending hot liquids, use caution.) Stir the blended soup into the remaining potato mixture in the slow cooker. Divide the mixture evenly among six bowls. Top with cheese, yoghurt, scallions, and bacon in an even layer.
