Recipe

1. Set aside a greased 15x10x1-inch baking pan that has been lined with waxed paper. 5 minutes on high speed, beat eggs in a mixing bowl. Gradually add the sugar until the mixture is thick and lemon-coloured. Mix in the sweet potatoes thoroughly. Mix the flour and cinnamon, then stir it into the sweet potato mixture. Pour into the pan.
2. Bake for 10-15 minutes at 350°F, or until the cake springs back when lightly pressed. Allow 5 minutes to cool before inverting the cake onto a kitchen towel coated with confectioners' sugar. Remove the waxed paper by gently peeling it away.
3. For the filling, in a bowl, beat cream cheese, confectioners' sugar, butter and vanilla until fluffy. Fold in nuts. Unroll cake; spread filling evenly over cake to within 1/2 in. of edges. Roll up again, Cover and refrigerate. Dust with confectioners' sugar if desired.

  • 3 tablespoons orange juice concentrate
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1-1/4 cups quick-cooking oats
  • 1 cup butterscotch chips
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

1. In a large bowl, mix cream butter and sugar until light and soft. Beat in the egg, sweet potato and orange juice concentrate. Mix the flour, baking powder, cinnamon, baking soda, salt and nutmeg; slowly add to the creamed mixture and mix well. Stir in the remaining elements.
2. Drop two full teaspoonful of butter onto greased baking sheets. Bake at 350° for 14-16 minutes or until firm. Remove to wire racks to cool.

No-Bake Sweet Potato Cheesecake Bars

Ingredients

  • 1 package white cake mix (regular size)
  • 1 cup chopped pecans, toasted
  • 1/2 cup cold butter, cubed
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup sugar
  • 3 large eggs, room temperature
  • 1 can (14 ounces) sweetened condensed milk, divided
  • 3 cups cooked and mashed sweet potatoes (about 3 medium)
  • 2 teaspoons pumpkin pie spice

1. Preheat oven to 350°. Blend cake mix and pecans; cut in butter until crumbly. Press mixture onto the bottom of a greased 13x9-in. Baking dish.

2. Whip cream cheese, sugar, 1 egg and 2 tablespoons milk until silky; set aside. Stir together sweet potatoes, remaining eggs, remaining milk and pie spice; flow over pecan mixture. Dollop cream cheese mixture over sweet potato mixture. Slice through cream cheese mixture with a knife to stir into sweet potato mixture.

3. Bake until set and a little golden on top, about 45 minutes. Allow to chill thoroughly; cool before slashing into bars.

Place the first four ingredients in a food processor; process until smooth. Pour into moulds or paper cups—top moulds with holders. If using cups, top with foil and insert sticks through the foil. Freeze until firm.
