Today is the fourth day of Navratras and one of the most important aspects of this auspicious occasion is the observance of the fast. Devotees dedicatedly observe fast throughout the nine days of Navratras and while it might be difficult to fight your food cravings, the food you eat doesn't have to be boring.

A typical Navratri thali might include delicacies such as Sabudana kheer, fruit chaat, kuttu ki poori and aloo ki sabzi. But today, we have some unusual and lip-smacking vrat recipes for you to give your Navratri thali an upgrade-

Sabudana Khichdi

Sabudana (Tapioca) is highly nutritious and provides instant energy during a fast. Sabudana, peanuts, and subtle spices are used in this light meal. You might also make sabudana kheer or sabudana vada, both of which are delicious Navratri appetizers.

Ingredients:
1 Cup sabudana
1/2 cup peanut
2 tbsp ghee
1 tsp zeera
3-4 Ssabut lal Mirch
1 sprig kadhi patta
2 tsp sendha namak
1 tsp chilli powder
1 tbsp hara dhania
1 tsp green chillies
1 tbsp lemon juice

How to make it:
Wash Saboodana and soak in water for about an hour. Drain in a colander, then spread over a thick cloth for about 1 hour. Add sabudana, peanuts, salt, and chili powder and mix it well. Heat the ghee and add zeera, lal mirch, and kadhi patta. Add saboodana mixture cooked it on a low flame. Add the lemon juice and mix it well. Garnish with coriander and the green chilies.

Kuttu ka Dosa

If you like dosas, try something different this Navratri instead of the typical kuttu puris. A crispy dosa with potato stuffing cooked with kuttu ka atta. Don't ignore to accompany it with a chutney of mint and coconut.

Ingredients:

For Potato Filling:
3 boiled potatoes
Ghee
Seendha namak as per taste
1/2 tsp red chilli powder
1/2 tsp ginger, chopped

For the Dosa:
Kuttu ka aata
Boiled arbi
Seendha namak as per taste
1/2 tsp ajwain
1/2 tsp red chilli powder
1 tsp ginger
1 tsp green chillies
Ghee
1/2 tsp green chillies
Ajwain

How to make it:

Prepare the Potato filling:
Heat ghee in a pan, crush the potatoes into it and mix with the ingredients. Toss the potato mixture around for a few minutes till it becomes light brown in colour. Take it out and keep it aside.
Prepare the Dosa:
In a bowl, mash the arbi and mix it with flour and salt. Add some water and mix well. Add the ajwain, red chili powder, ginger, and green chillies and mix again. Keep adding water and stirring in the batter. Heat a flat pan, dab a bit of ghee on it, pour a ladle of the batter and spread it. Now flip it over and cook the other side. Serve with coconut chutney.

Makhana Kheer

Desserts make people happy, so here's a low-fat kheer made with makhana and nuts for you. Enjoy yourself without having to worry about the calories because of its low-fat element. This delectable kheer dish will make your fasting even more worthwhile.

Ingredients:

1 Litre Milk
1/4 cup Makhana
2 tbsp Sugar
2 tsp Pistachios, chopped
2 tsp Almonds, chopped
1 tsp Green cardamom powder

How to make it:
In a deep vessel, pour in the milk, break the makhanas and add them to the milk. Add sugar and stir for a few minutes. Add pistachios, almonds and cardamom powder, stir well again and serve hot or cold, as you like.

Arbi Kofta with Yoghurt Dip

When you're fasting, are you sick of eating potatoes for breakfast, lunch, and dinner? Try this delectable Arbi Kofta recipe, which is ideal for a teatime snack.

Ingredients:
250 Gram Arbi/colocasia roots
3-4 tbsp Water chestnut flour (kuttu ka aata)
1 Green chili
1/2 inch Ginger, finely chopped
1 tsp Carom seeds
As required Rock salt
2-3 tsp Oil
For the dip:
Few sprigs Mint
100 gram Curd
50 gram Cucumber, finely chopped
For garnishing Pomegranate

How to make it:
Boil the arbi till it becomes soft. Peel them and add the other ingredients. Mash well and mix everything uniformly. While shaping the kofta into cylinders and pan-fry them with some oil till golden brown.
Prepare Mint Yogurt Dip:
Hang yogurt to drain excess water. Mix chopped mint and cucumber into the yogurt. Serve Arbi Kofta hot with mint yogurt dip.

Samak Chawal ka Dhokla

This recipe is a refreshing change from the traditional fried pakoras and puris. Samak ke chawal is used to make steaming dhoklas. This dhokla recipe is seasoned with whole red chilies, cumin, ghee, and curry leaves, making it a nutritious way to fast. Enjoy this special Navratri fasting dish at home, and you won't be able to stop yourself from making it again.

Ingredients:
3/4 Cup Samwat ke chawal
1 cup Sour yogurt
1 tsp Ginger paste
to taste Green chillies paste
1 tsp Sendha namak (rock salt)
2 tsp Oil/ghee
2 Whole dry red peppers
6-7 Curry leaves
1 tsp Cumin seeds
For garnishing Coconut and fresh coriander

How to make it:
Roast the rice in a pan very lightly. Prepare the batter by mixing rice, rock salt, chilli paste, ginger paste and yogurt. Leave the mixture to ferment overnight. Grease a tin with little ghee and transfer the batter into it. Place the tin into the steamer and let cook for 20 minutes.
Prepare seasoning:
Heat ghee in a pan and add cumin, red pepper, and curry leaves. Now pour it over the dhokla. Cut the dhokla into serving pieces and serve garnished with coriander and coconut.
