Winter brings an abundance of green leafy veggies to our kitchen. Spinach is among the most popular green vegetables. Spinach is a food which is not just healthy but also very versatile. It contains Vitamin A, C, K1, folic acid, iron, and calcium. It is also low in calories and also stabilises blood sugar. Antioxidants and both soluble and insoluble fibre prevent constipation. Lutein, an antioxidant found in spinach, helps prevent age-related macular degeneration, which can cause blurry vision.

Spinach Chickpea Corn Tikki

Ingredients

  • 1 cup soaking white chana
  • 2 cooked potatoes
  • 1 cup spinach
  • 1/4 cups corn
  •  2 tbsp oil
  •  Salt - to taste
  •  1/2 teaspoon jeera powder
  •  1/4 teaspoon garam masala
  •  1/2 teaspoon coriander powder
  •  1/4 teaspoon red chilli
  •  1 teaspoon sesame seeds

Instructions

Boil chickpeas after soaking them for 7 hours. Peel the potato after boiling it.

Shred the spinach very finely.

Combine the mashed chickpeas, chopped spinach, chopped corn, and mashed potatoes in a bowl. To produce a very soft dough, combine the aforementioned spices with 1 teaspoon of oil.

Apply some oil on your palm now and take a small amount of dough to form Tikkis.

The Tikki is rolled in sesame seeds. Keep them in the refrigerator for 15 to 20 minutes to ensure they set nicely.

Pour some oil into the pan, then shallow fried your Tikki until it begins to turn brown.

Spinach Moong Dal idli

Ingredients

  • 1 cup of wet moong dal
  • 1 cup of spinach
  • Take 2 teaspoons of oil
  • Add salt to taste
  •  1/4 tsp Red pepper
  • 1/4 teaspoon Baking soda

Instructions

Let the yellow moong dal soak for 5 to 6 hours. To prepare dal puree, mix the dal in a blender.

Puree the spinach after blanching it.

Combine the purees of spinach and moong dal in a bowl. Add the spices listed above. Make a thick sauce and add water to change the consistency. The batter shouldn't be very fluid, like cheela batter.

Grab the idli mould, grease it, and use it. Add baking soda to the batter just before pouring.

On a low burner, steam the idlis for 12 minutes.

Serve hot with pudina/mint chutney or sambhar.

Spinach and egg Quiche

Ingredients

  • 2 eggs
  • 1 cup of spinach
  •  2 teaspoons oil or melted butter
  •  Salt, according to taste
  •  1/4 tsp of Red pepper
  •  1/4 cup corn
  •  1/4 cup red bell peppers
  •  1/4 cup yellow bell pepper
  •  1/4 cup onions
  • 1 cube of cheese

Instructions

Make a puree of spinach by adding water to it and belnding.

Place two whole eggs in a bowl. Add the spinach puree and all the chopped vegetables.

Properly whisk the egg.

To the egg-spinach batter, add cheese.

Use oil or butter to grease the muffin tins.

Fill the muffin tin with the batter.

Bake the eggs for 15-20 minutes at 200 degrees in the oven.
