  • Take 1+1/4 cup maida and add 2 tbsp cornflour
  • Add 1/4 salt, 1/4 baking soda and 1tsp baking powder with the correct measurements. Sieve it all together and keep it aside.
  • Take 1 cup milk mix it with 1 tbsp white vinegar and leave it for 10 mins.
  • Take 1/3 cup of vegetable oil or ghee as per your choice and add 3/4 sugar powder and mix it well. Mix it well and then add 1/4 TSP vanilla essence to the mixture
  • Then add the milk and vinegar mixture with the little bit of already prepared dry mixture.
  • Add the oil and sugar and blend it well.
  • Then add the leftover dry mixture with the liquid mixture.
  • Mix the dry mixture with the liquid and blend it well but do not over-mix! Your batter is ready now.
  • Fill the batter in the disposable piping bags for frizz-free preparation.
  • Get the 3 to 4 tbsp jam (mix fruit jam) ready for adding to the cupcakes.
  • Fill the jam into the piping bags.
  • Preheat the microwave to 175 C for 5 mins
  • Add the batter to the cups and put the jam in the middle of the batter.
  • Bake it at 175 C for 15-18 mins
  • Keep it aside for cooling for 20 mins and then garnish it with your favourite colours!
