Largely for its high nutritional value, oats have been increasingly popular over the past few decades. Oats may be used in many ways and are a great source of fibre, vitamins, minerals, and antioxidants.

They help with weight loss, diabetes control, and cardiovascular health, plus they don't contain any gluten. Boiling oats in water or milk make them a popular breakfast option. But hot oatmeal isn't exactly what you crave in the summer. Oatmeal can also be enjoyed in baked goods like muffins, cookies, and granola bars.

Strawberry Oatmeal Muffins

Ingredients

  • 180 grams of refined flour
  • 90 g of rolled oats
  • 200 ml of milk
  • 200 grams of castor sugar
  • Egg - 2 No
  • 2 teaspoons of baking powder
  • 50 ml of clarified butter
  • 50 ml of honey
  • 3 ml Strawberry Extract
  • Strawberries filling 100 grams

Method

  • Prepare an oven at 180 degrees C. Grease a muffin tin.
  • Put the oatmeal in a bowl, add the milk, and let it sit for 10 minutes to absorb the liquid and soften.
  • Create a well in the centre of a bowl containing refined flour, baking powder, and caster sugar. In a separate bowl, combine the egg, strawberry extract, melted butter, and honey.
  • The wet components should be poured into the dry ones and stirred vigorously until barely combined. Add the strawberry fruit filling and gently combine.
  • Bake for 15-20 minutes, or until a toothpick or skewer inserted into the centre of the cake comes out clean, after spooning the prepared batter into muffin molds.
  • Bring it down to room temperature before serving.

Oatmeal and Cranberry Cookies

Ingredients

  • Whole wheat flour - 60 g
  • 100 grams of oats
  • Butter, unsalted, 120 grams
  • Pure Sugar - 120 g
  • Egg - 1 No
  • 1/2 teaspoon of baking powder
  • Powdered cinnamon, 5 grams
  • 5 ml of pure vanilla extract
  • 75 grams of dried cranberries

Method

  • Turn on the oven to 180 degrees C. Put parchment paper on two baking sheets.
  • Cranberries should be soaked in water until they soften.
  • Add butter and sugars to a planetary mixer, and beat on medium speed until the mixture is creamy and smooth. Mix in the egg and vanilla extract until smooth. It's time to scrape the bowl's rim.
  • Add flour, baking soda, and cinnamon to make cookie dough and beat until smooth. At last, fold in some oats and some chopped cranberries with a spatula.
  • Form the dough into balls, then set them on baking sheets.
  • To get a golden cookie, bake for 12-15 minutes. Cookies should be stored in sealed containers when they have cooled thoroughly.
