Mangoes are known as the kings of fruits. The scent of ripe mangoes lifts the atmosphere and stimulates the hunger. Shakes, chutneys, aam panna, cakes, salads, smoothies, ice creams, kheer and more can be made using this versatile fruit.

Aam Panna and mango shakes can chill the body and treat heat stroke, respectively. Many people like to eat pooris with sweet, tempting Aam ras, while others prepare a variety of pastries with the king of fruits.

Mediterranean Fattoush with  mangoes

Ingredients

  • Pita breads  2
  • Vegetable oil - 1 tbsp
  • 1 ripe, peeled, and sliced mango
  • Pomegranate Seeds - 20 gm
  • 2 diced large plum tomatoes
  • 1 diced  cucumber
  • 1 diced red onion
  • 1 sliced red radish
  • Flat 50 g chopped parsley
  • 10 grams of chopped fresh mint
  • Extra virgin olive oil - 2 tbsp
  • Fresh lemon juice - 1 tbsp
  • Sumac powder - 1 tsp
  • 1 garlic clove 10 gm Kosher salt
  • Sheep milk feta cheese - 30 gm
  • Pomegranate molasses - 10 ml

Method

  • Heat oil in a large pot over medium-high heat, then place pita pieces in a single layer in the pan. Fry in batches until golden brown, and then pat dry with a paper towel.
  • Mix cucumber, tomatoes, onions, radish, parsley, mint, olive oil, lemon juice, sumac, garlic, salt, and ground black pepper in a bowl.
  • Add mango slices, pomegranate seeds, chopped feta, and pomegranate molasses to the top

Aam Ras

  • Alphonso mangoes-500 grams Cardamom powder – ½ tsp
  • 1 pinch of saffron threads
  • 2 to 3 tsp  jaggery
  • Vanilla ice cream – 1 scoop
  • 1/4 tsp dry ginger powder
  • water or milk, as needed

Method

  • Use clean water to wash the Alphonso mangoes well. Drain the water and use a clean dish towel to dry them. Peel the bananas and cut them up.
  • Put the pieces of mango in a blender. If the mangoes are slightly tart or sour, you can also add sugar or another sweetener of your choice.
  • Mix until a smooth pulp forms. Move the pulp of the mango to a bowl. Mix in vanilla ice cream, cardamom powder, and saffron threads that have been crushed.
  • Combine well. Add some milk (dairy or plant-based) or water to thin it out a bit.
  • Pour into something. Cover the jar and chill it for 30 minutes to an hour in the fridge. Or, you can serve in small bowls right away.

Mango Shrimp Salad

Ingredients

  • The shrimp were cooked in extra virgin olive oil.
  • Salt to taste
  • To taste, pepper powder
  • Chili flakes to taste
  • Jalapeno to taste
  • Lime juice (fresh)
  • 1 ripe, fresh, and peeled mango
  • Fresh cilantro adds a splash of flavor and color.
  • Lettuce: This quick and easy salad starts with chopped lettuce
  • Sweet Chili Sauce – For a sweet and spicy taste (50 ml)

Method

  • Prepare the shrimp by cooking them. In a bowl, mix the shrimp, olive oil, salt, and pepper.
  • Put the grill pan over medium-high heat and cook the shrimp for about two to three minutes. Take them out of the pan and mix them with lime juice.
  • To make the salad, put everything else except the lettuce in a big bowl. Let stand for 20 minutes. On a serving plate or bowl, put layers of leaves and then add the mango mixture.
  • Serve: Put the salad on a plate, squeeze lime juice on it, and serve.
