Paneer Pakoda

Ingredients

  • 200 gm paneer
  • 1/2 cup gram flour
  • 1 teaspoon ground coriander
  • 1/2 tsp chaat masala
  • 1/2 tsp garam masala
  • 1/2 tsp chili powder, red
  • 1/2 tsp powdered turmeric
  • 3 tsp soda
  • 1 tsp salt

Method

  • Add cheese, red chili powder, chaat masala, and garam masala to a medium-sized bowl. Give the paneer a good toss to coat it well. Now, get another bowl and add gram flour, turmeric powder, red chili powder, coriander powder, green chilies, soda, and salt to taste. Mix them and add water to make a thick batter.
  • Now, heat some oil in a pan. Dip the paneer in the gram flour batter and fry it in oil until it turns brown. Put salsa and sauce on it.

Dal Vada

Ingredients

  • 1 cup chana dal
  • 2 tsp fennel seeds
  • 5 to 6 curry leaves 1 teaspoon of red chili powder
  • 1-inch ginger
  • 2 chopped onions
  • 5-6 garlic
  • 3-4 chopped green chilies
  • 1-2 tbsp oil

Method

  • Soak the chana dal for 2–3 hours, then drain it. Put this into a mixer to make a coarse purée. Be careful not to make a paste out of it.
  • Grind ginger, garlic, and fennel seeds into a paste without adding water. Add this to the dal sauce you just made. Now mix in the salt, onions, curry leaves, and red chili powder.
  • Now, heat some oil in a cooking pan. Take a small piece of the mixture, flatten it, and place it carefully in the oil. Fry this in hot oil until it turns golden brown. Serve it hot with sauce and a cup of tea.

Aloo Chaat

Ingredients

  • 3-4 potatoes
  • 1/2 tsp powdered roasted cumin
  • 2 chopped green chili
  • 1/2 tsp chili powder, red
  • 1/2 tsp black pepper
  • 1/2 tsp chaat masala
  • 1 tablespoon of mint leaves, finely chopped
  • 1 tablespoon of coriander leaves, finely chopped
  • 2 tsp lemon juice
  • 1 tsp salt

Method

  • First, put the potatoes to boil. When it's done, peel it and cut it into small pieces about the size of your finger. Then, heat some oil in a pan and fry them over a medium flame until they are golden brown.
  • Mix them in a bowl with the other ingredients. After a good stir, it's ready to be served.

Kulfi ice cream

Ingredients

  • 200 ml of cold sweetened condensed milk
  • 2 cups of cream for whipping
  • 2 cups nuts
  • 2 tsp vanilla extract
  • 2 saffron threads
  • 1-2 teaspoons powdered cardamom

Method

  • Put the saffron threads and 1 tablespoon of warm water in a small bowl. Set it down. Put sweetened condensed milk in the fridge to keep it cold.
  • Use hand mixer with a whisk attachment to  beat cold heavy cream on medium speed until stiff peaks form. Slow the mixer down a bit and add the condensed milk and vanilla essence to the whipped cream. Next, speed up the machine again and beat the mixture until it forms hard peaks. Now that your ice cream base is ready, add the ground pistachios, cardamon, and liquid with saffron to it. Mix everything at a medium speed until everything is spread out evenly.
  • After your ice cream has been frozen in a container for at least 6 hours or overnight, scoop it out and serve it.

Mango Halwa

Ingredients

  • 2 cups pureed mango
  • 1/4 cup sugar 1 tbsp cardamom powder
  • 1 tablespoon of saffron
  • 3 tbsp ghee
  • 8 to 10 chopped cashews
  • 8 to 10 chopped pistachios

Method

  • Cook the mango puree for two minutes. Then, mix in the sugar while the food is cooking over low heat. When sugar is added, the mixture becomes liquid first, and then it starts to get thicker.
  • After a few minutes, when it starts to get thick and stick together, add 1 tsp ghee. Stir the food while it's cooking on low heat. If the mixture starts to stick, add ghee and keep cooking. After adding the rest of the butter, mix everything. Now you can see that the halwa looks shiny, which is the best state.To add nuts to the halwa, fry them until they turn golden brown in 1/2 teaspoon of ghee. Quickly stir, and then turn off. Mango halwa can be served warm
