As the name suggests, the dish contains two primary elements – dahi (curd) and bhalle (fried dough balls made of urad dal/moong daal/channa dal). This milk-based cooling drink is often topped off with nuts and spices, and sometimes even laced with bhaang (a hallucinogenic). Everywhere in North India (Banaras is called the hub of thandai), this drink is right at the heart of the festival and even offers medicinal benefits! 4. Gur naal Ishq meetha – Malpua
Using jaggery instead of sugar to make malpuas doesn’t make this dish any healthier, but does work brilliantly when it comes to flavour. The earthy jaggery taste when combined with the flavour of the desi ghee and creamy rabdi creates something that takes decadence to another level. 5. Malai maar ke – Badam Phirni

6. Masti me khao – Puran poli
