Festivals are incomplete without feasts and sweets. We all wait for the festivals to get a reason to cook delicious recipes. Every occasion has its special dishes that are unanimously prepared across households.

Eid Milad-un-Nabi is celebrated in memory of the Prophet Muhammad who was born on the twelfth day of Rabbi-ul-Awwal. Rabbi-ul-Awwal is the third month of the Islamic year. The holy prophet was born in Mecca, Saudi Arabia in 571 AD. People celebrate this day by organizing milads (sermons), singing naats(songs in praise of the prophet) and preparing tasty food.

Zarda

'Zarda', a traditional dish which is prepared on special occasions is a favourite for the day. 'Zard' means yellow as it appears. The main ingredients of this dish are yellow colour and rice. It is sweet rice which is prepared with some authentic flavour and a specific way. For making this dish you just need to soak rice for 30 mins. Boil water in a big bowl, and add yellow colour and sugar to it. Add cardamoms, cloves and saffron to it. Add the soaked rice and put the lead to let it cook. Garnish it with mawa and lots of dry fruits and your special mouthwatering dish will be ready.

Sheer khurma

Again an authentic and delicious dish on the menu, 'sheer khurma'. 'Sheer' means milk and 'khurma' means dates. The dish has a special appearance of 'vermicelli'. This sweet dish is prepared with boiling milk and adding dates and other dry fruits in it. Roast the vermicelli until it's brown. Add sugar and vermicelli to the boiling milk and let it cook. Your sheer khurma will be ready with this quick process, garnish it with dry fruits and serve it to your loved ones.

Enough of sweetness, for now, let us add some spice to the taste buds. Make use of these authentic spices in the dish. Start with marinating the mutton pieces in ginger garlic paste and leave for one hour. Then make a mixture by adding fried onions to yoghurt or curd, red chillis, cinnamon, cardamom, cloves, mint leaves and salt. Then add the marinated mutton in it and keep it for one hour. Semi-cooked rice is to be added to the marinated mutton and let cook for some time with a closed lid. Add saffron, lime juice and rose water to it. Serve hot garnished with coriander leaves, lemon and mint leaves.

This Mughlai stuffed bread is a treat for your taste buds. Rich stuffed bread is not a usual naan. It is filled with dry fruits and grated coconut. To prepare the soft dough, you need to add yoghurt, yeast and adequate water and then leave it for some time. Till that time prepare the stuffing, grind pistachio, raisins and coconut to get a coarse paste. Fill the stuffing in the dough and roll it to make a circular 'chappati'. Bake it in the oven until it is cooked from the inside out. Apply ghee or butter and serve hot!
