Curd rice cooking method:

  • Take a big  mixing bowl, roughly mash the rice until no lumps form. Add little curd and salt to the chilled rice. If desired, add some fresh seasonal vegetables to the rice and give everything a thorough toss. In a pan, heat some oil and add some mustard seeds, cumin seeds, and asafoetida. Allow them to sputter.
  • Add in some chana dal, urad dal, and red chili and stir them all. Once the dal has turned brown, add the curry leaves. Pour the Tadka you just made over the curd rice mixture.
