Creamy pineapple pie is a tasty dessert that kids and adults both love. It is a lightly sweet dessert that you can serve to your guests and by preparing it at home you can make your kids happy too.

Ingredients-

  • 1 can of sweetened condensed milk
  • 1 can crushed pineapple, undrained
  • 1/4 cup lemon juice
  • 1 carton of frozen whipped topping, thawed
  • 1 cracker crust

Directions

Combine milk, pineapple, and lemon juice folded in whipped topping. Pour into the prepared crust. Refrigerate until serving. If desired, serve with toasted macadamia nuts and additional crushed pineapple.

Pineapple pudding cake

Pineapple pudding cake is an easy-to-make best treat for your summer afternoon. You can have it any time of any day but remember you cannot store it for too long. Try to finish it on the same day or the day after.

Ingredients-

  • 1 package yellow cake mix
  • 1-1/2 cups cold fat-free milk
  • 1 package sugar-free instant vanilla pudding mix
  • 1 package of reduced-fat cream cheese
  • 1 can unsweetened crushed pineapple, well-drained
  • 1 carton = frozen reduced-fat whipped topping, thawed
  • 1/4 cup chopped walnuts, toasted
  • 20 maraschino cherries, well-drained

Direction-

Preheat the oven. Prepare cake batter according to package directions and pour it into a greased baking pan. Bake it for 15-20 minutes until a toothpick inserted near the centre comes out clean. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set.

In a small bowl, beat cream cheese until smooth. Beat in pudding mixture until blended. Spread evenly over the cake. Sprinkle it with pineapple. Sprinkle with walnuts and garnish with cherries. Refrigerate and serve.

Pineapple shortcakes jars

Instead of using the oven, the slow cooker is used to prepare this deliciously unique but mouthwatering dessert.

Ingredients-

  • 1-1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/3 cup cold butter
  • 1 large egg, room temperature
  • 3/4 cup sour cream

Toppings-

  • 1-1/2 cups fresh pineapple, cut into 1/2-inch pieces
  • 3 tablespoons sugar, divided
  • 1 teaspoon grated lime zest
  • 1/2 cup heavy whipping cream
  • 1 medium lime, thinly sliced, pineapple

Directions-

In a large bowl, whisk flour, sugar, baking powder, salt, and baking soda. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk egg, and sour cream. Add to the flour mixture and stir.

Pour mixture into 6 greased half-pint jars. Place jars in an oval slow cooker, and add enough hot water to reach halfway up the jars, about 5 cups. Cook, covered, on high for 1- 2 hours.

Meanwhile, for the topping, combine pineapple, 2 tablespoons sugar, and lime zest. Refrigerate for at least 1 hour. Remove jars from the slow cooker and place them aside to cool completely. In a large bowl, beat cream until it begins to thicken. Add remaining 1 tablespoon sugar; beat until soft peaks form. Garnish shortcakes with pineapple mixture, whipped cream, and, if desired, lime slices.
